Originally found in the Better Homes & Gardens Cookbook , this recipe was tweaked over the years into the one we use today. Feel free to take your own liberties and adapt this recipe to your tastes. A good option is to add about 8 ounces of chopped mushrooms when sautéing the onions. Also, swap the ground beef and pork with ground turkey or chicken for a healthier option.
What you’ll need:
One large pot. When we say large, we mean it. This recipe makes a lot so we always use our 8 1/2 Quart Calphalon Aluminum Dutch oven when we throw this recipe together.
Ingredients:
1 pound lean ground beef (90/10)
1 pound ground pork (Italian)
1 large yellow onion, chopped
6 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon dried basil
12 ounces tomato paste
1 32 ounce box beef broth
16 ounces spaghetti noodles
4 cups water
In a large Dutch oven over medium high heat, brown the meat and sausage until cooked though. Remove meat and add chopped onion (and mushroom if using) and cook another 5 minutes or until onions become soft and translucent. Add the garlic and cook 1 minute more. Don’t cook too long or the garlic will burn and become bitter.
Next add the oregano, basil, (red pepper flakes for an optional kick) and tomato paste. Stir to combine. The tomato paste will act as a binder and will hold everything together.
Add the beef broth and water. Bring to a boil. Break the spaghetti noodles in half and add to the pot. Stir while adding to make sure they don’t stick together.
Reduce heat, cover, and simmer on low for 20 to 30 minutes until the spaghetti noodles are cooked. Don’t worry it will look soupy at first but it will thicken up as the noodles cook. It might take a little longer or a little less so be sure to check every few minutes towards the end.
This recipe is sure to please and makes enough to feed a decent size crowd. If I were to guess, it would feed 8-10 adults.
