Introducing our version of Million Dollar Chicken Casserole – a culinary masterpiece that leaves no leftovers, even with four hungry kids in the mix! This easy weeknight sensation is not just a meal; it’s a lifesaver for busy families. From start to finish, you’ll be done in less then an hour. Plus, the best part? You can prepare it ahead of time, ensuring that your family’s dinner is always a million-dollar experience.
What you’ll need:
Large skillet
9×13 baking dish
Ingredients:
1 box Chicken Rice-a-Roni (Family Size)
1/4 cup butter (for Rice-a-Roni)
4 cups cooked chicken (We always use a whole pre-cooked Rotisserie chicken)
1 10.5oz can Cream of Chicken Soup
4oz cream cheese (softened)
1 cup Cottage Cheese
1/2 cup sour cream
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 cup Parmesan cheese (grated)
3 oz Fried onion
Directions
First, pre-heat your oven to 350 F and grease your 9×13 baking dish and set aside.
In your large skillet prepare Rice-a-Roni according to package instructions,
When the Rice-a-Roni is done (about 20-25 min), in the same skillet add chicken, cream of chicken, sour cream, Cottage cheese, cream cheese, garlic powder and onion powder. Stir until cream cheese is melted and everything is combined.
Next, pour ingredients into prepared baking dish and top with Parmesan cheese and fried onions. If you kids are picky like mine you can swap the fried onions for crushed Ritz crackers for that added crunchy texture. Or, you can simply leave them out.
Bake uncovered at 350 F for 30 minutes. Remove from oven and let rest for 5 minutes.
This should easily feed 6 to 8 people. If preparing ahead of time, stop before adding Parmesan cheese and fried onion. Cover and refrigerated until ready to cook. Baking time will need to be extended since it will be going into the oven chilled. I haven’t tried it, but I’m sure it can be frozen at this step as well. Just like anything, thaw in fridge ahead of time before baking.
